Ingredients & Suppliers

Flour, salt and yeast. Three simple ingredients which combine to make our classic dough. We’ve worked hard to keep our dough as simple as possible and found that leaving it to rise for 72 hours really makes all the difference because the yeast has time to develop naturally. It’s lighter and healthier but tastes divine… what more can you ask for!

Another of our biggest priorities is sourcing the best quality ingredients we possibly can without harming our sensitive planet any more than we need to, shout out to you Earth for all of your goodness you provide for us! With this in mind, we try to avoid mass production operations and keep our carbon footprint low by sourcing as much of our produce as we can locally from likeminded people who believe in a fair, compassionate and thriving world.

The Buffalo Farm

Bogily Farm Steading, Bogily Road, Kirkaldy, KY2 5XY

All of our meat and poultry comes from Buffalo Farm in Fife who are crazy devoted to their animals and how they are looked after and fed. They use traditional farming methods and let their animals live as natural a life as possible without over medicating or intervening unless absolutely necessary. They also support other local farms and communities and all in all are great guys in our opinion and we’re pretty chuffed to be able to work with them.

Innes & Gunn

This local Edinburgh brewery provide us with the beer that we use to cook our meets and they’re also awesome enough to supply us with old beer barrels so that we can smoke our meats to perfection, if we do say so ourselves. Smug doesn’t cover how we feel about working with these guys!

Ah Unknown Italy, how we owe them. They are a super kind bunch who specialize in the importation of genuine and exquisite Italian food and drink to Scotland and their mission is to provide Edinburgh with authentic and exceptional Italian food, so naturally we get on pretty well!
